Are you traveling this Memorial Day weekend? Try our road trip sandwich for a fast, easy and portable meal on the go. The combinations of ingredients are endless and can be tweaked it to fit your tastes.
We make this sandwich to take with us on long road trips. But it is also great for picnics, meal prepping lunches for the week, or whenever you need to make lunch for a crowd.

The Road Trip Sandwich
The road trip sandwich is great for meals on the go. The combinations of ingredients are endless and can be adjusted to fit your taste.
Ingredients
- 1 loaf French Bread
- 1/2 to 1 lb deli meat of your choice - we like roast beef or turkey
- 4 slices deli cheese of your choice - we like cheddar or swiss
- 4-6 lettuce leaves, washed & dried
- 1 tomato, sliced
- 1/4 cup pickled banana peppers
- mayonnaise to taste
- mustard to taste
- Italian seasoning to taste
Instructions

Slice the loaf of bread in half lengthwise, as if you are opening it to make one giant sandwich.

Layer meat, followed by cheese along the bottom side.
(We like roast beef and/or turkey. For the picture to the right, I used roast beef on one side and turkey on the other to give us a bit variety.)

Then layer the sliced tomatoes, banana peppers, and lettuce (or other toppings of choice) on top.

Add mayonnaise, mustard, and Italian seasoning (or other dressings and spices of choice) to the top side.

Close sandwich and press down slightly. Cut sandwich into 2 inch slices with a serrated bread or sandwich knife.

Wrap each individual slice with plastic wrap. And voila - they are ready to take with you! Sandwiches are best if used within 2-3 days.
Recipe Notes
The combinations with this sandwich are truly endless. Feel free to swap out the meat, cheese, dressing and spices for whatever you prefer.

This sandwich has become known as the road trip sandwich in our house, and we make it whenever we go on long road trips.
Here is why we love it so much:
- It can be made up to a day in advance and helps me to avoid my usual state of last-minute, vacation packing panic.
- It’s a great way to use up extra meat, cheese, and veggies that you may have on hand before going away.
- Cheaper than dining out, healthier than fast food and saves us time while on the road so we can get to our destination quicker.
Okay, that last one was actually 3 reasons rolled into one, but they are semi-related 🙂

- Cabot Creamery Alpine Cheddar Cheese
- Pickled banana peppers – we make our own using a recipe from The Country Cook. Definitely the easiest and tastiest recipe I have tried for pickling hot peppers so far. We will definitely be using it again this summer!
What are you up to this weekend? We won’t be traveling, but I am still thinking about making this sandwich for lunches while we are home for 4 days. We have a busy weekend of farm and garden projects ahead of us. Having lunch already made each day would be a huge help.
